Eggs from chickens that is. Always try to buy organic and free range eggs as battery hens are not only inhumane but also are not hygenic. 50% of an egg is protein and they are high in fat but not actual calories, so if you don’t eat other high fat/fried foods, eggs are not that bad. The white mainly is protein while the yolk contains the other half of the protein and is high in vitamin A, some B, D and E vitamins. Also contains calcium, iron, phosphorus and zinc. Egg yolk is high in lecithin which is important for the nerve cells in our brain. Extremely versatile – have them scrambled, boiled, poached, omelettes, as a snack on their own as hard boiled, mixed through salads, in soups, baked into casseroles. Fried eggs shouldn’t be eaten reguarly. Eggs can actually help stop diarrhoea! Make sure you discard any really dirty or cracked eggs as they can contain salmonella.
