Figgy Fudgey Bliss Balls

A great source of fibre with the dates, figs and cacao. But don’t go too crazy as they could upset your tummy and also there is still a lot of natural sugar in these. One should be a good sweet treat!

1 1/2 cups almond meal

16 dried dates (I use Medjool dates – pitted. If using dried dates soak for a few minutes in boiling water first)

1/2 cup fried figs, firmly packed

3/4 cup desiccated coconut

2 tablespoons cacao powder

1 teaspoon vanilla bean paste

  1. Place dates and figs in a food processor with almond meal, coconut and cacao powder. Process on high until mix comes together
  2. Scape down and add vanilla, pulse until combined.
  3. Add a small amount of water if mix is too dry to make it come together
  4. Roll tablespoon shaped balls. You can roll in extra desiccated coconut if desired.
  5. Store in an airtight container in the fridge
