Okra

Food of the Week…

Okra

These green seed pods are not as well known in Australia as they are in South America.

They have a great nutrient profile including rich in beta-carotene, vitamin c and other antioxidants. Is a good source of magnesium and folate.

They are a great source of fibre too.

They are better if eaten raw so you don’t loose some of these nutrients in the cooking process – Very lightly sautéing them for a couple of minutes can make them more palatable.

They are beneficial for liver health, helping to detox, they carry cholesterol out of the body and can help with weight loss.

They are in season now, so keep your eye out.

It seems people either love or hate okra – Where do you sit?
