Healthier Rocky Road

I was inspired to try out this recipe and it turned out fantastic. My family is quite a fan of Rocky Road, so this was a delicious Christmas treat that could be had all year round.

I didn’t really measure anything, but I’ll give you rough measurements.

350g Dark Chocolate – Organic times is my preferred cooking chocolate

2 handfuls organic macadamias

2 handfuls organic cranberries

2 handfuls organic desiccated coconut

Marshmallows of choice – we used Coles mini coloured ones – naturally coloured

1/4-1/2 cup Peanut butter (or you can use almond butter or any nut butter)

More cranberries and shredded coconut for the top

  1. Line a baking dish with baking paper.
  2. Sprinkle over the macadamias, desiccated coconut, cranberries and marshmallows.
  3. Drizzle over nut butter (you might have to melt it down a bit if it’s too thick).
  4. Melt chocolate in a glass bowl over boiling water. When melted, pour over the top of the mix to cover.
  5. Top with cranberries and shredded coconut
  6. Set in the fridge for a few hours or overnight.
  7. Can last a week in the fridge (if it doesn’t all get eaten)!
