Artichoke

There are two types of artichokes – Jerusalem and Globe. The ones pictured are globe artichokes. They are very different from each other.

Jerusalem artichokes are a tuber and looks more like ginger with a rough skin. They are not so commonly found in Australia, but they are one of the best prebiotic foods, great for liver and supporting healthy bile production, good levels of iron and vitamin B1, plus great fibre.

Globe artichoke is a species of thistle and is no relation to Jerusalem artichokes. They are also high in fibre, folate, vitamin K, vitamin c, phosphorus and magnesium. They are a rich source of antioxidants.

So both artichokes are great to have regularly in your diet.

Globe artichokes can be a bit tricky to prepare as you do have to peel most of the outer leaves off first before cooking.
