Yams

Yams

Have you tried these guys before? Most often yams are mixed up with sweet potatoes, but these are different again. They originate in South America and are called Ulluco there.

They are a sweet nutty soft potato texture. They are very small – about 2-3cm in diameter. You don’t have to peel them (well really you don’t need to peel many vegies).
They are high energy carb containing good amounts of folate, beta-carotene (but not as much as carrots), B6 and potassium. If you have had excess salt and are craving alcohol or sugar cravings then eating yams can balance this out and control further sugar cravings due to it’s potassium.
Their season is just finishing (April to October), so keep your eye out.
I love them roasted, but you can cook them any way you would potato or sweet potato. I haven’t tried them in stir-fries, but this is a way I’ll try them next.
