One of the first cultivated crops, they are grown and eaten all over the planet. India produces more than 50 varieties of different colours and sizes used for their traditional dish of dahl.

They have diuretic effects and can help the heart and circulation.  They help this by removing arterial residues of fat and cholesterol.

They can also stimulate the adrenals and increase vitality to the kidneys.

Lentils are a reasonable source of protein containing 25g protein per 100g.

Lentils sprout easily and can be a great addition to summer salads. Sprouting increases the nutrients such B vitamins, Vitamins C, E  & K.  The minerals are increased to a lesser amount but include calcium, phosphorus and iron.  Sprouts also contain active enzymes which can help us digest and absorb.
