Chicken Salad with Lime Aioli Dressing

This is a light yet tasty green salad!  We have been growing broccoli which has been delicious raw, so is a great addition to this salad if you don’t want to cook your broccoli.

Serves 6 – Double it if you are wanting to serve to guests

150g Broccoli or broccolini cut into florets

1 bunch asparagus, trimmed and halved

100g snow peas or sugar snap peas, trimmed

1/2 cup frozen peas or even better if you can get fresh peas – I used fresh peas

1 iceberg lettuce or a baby cos or large cos

100g baby spinach leaves

1-2 avocadoes (depending on size), sliced

1/2 cup torn basil leaves

1 large BBQ chicken or 500g poached or grilled chicken

Dressing:

2 teaspoons finely grated lime rind

1/2 cup lime juice

2 teaspoons Dijon mustard

1 garlic clove, crushed

1/2 cup mayonnaise (We love GevityRx Great Guts Mayo)

1/4 cup extra virgin olive oil

  1. Make dressing – place lime rind, lime juice, mustard, garlic, mayo and oil in a bowl.  Whisk to combine. season with salt and pepper.
  2. Bring a large saucepan of water to the boil and add the asparagus and broccoli for 2 minutes (unless you want raw broccoli).  I grilled the asparagus and broccoli which is even better.
  3. Cut the lettuce into wedges (if using cos, just use full leaves on your platter) and place spinach and half the basil on a platter.  Top with lettuce wedges, all the other vegies, avo and chicken.  Sprinkle with remaining basil and drizzle with the dressing.
