SIBO Chicken Curry
Many people are turned off treating their SIBO (Small Intestinal Bacterial Overgrowth) as they are confronted by the restricted diet options. Yes the diet restrictions play a huge role in working with treating SIBO, but there are so many foods you can still have and the focus needs to be on these and not all the things you can’t have. Is it worth a few months of restrictions to be more comfortable and get rid of those digestive complaints?
Here is an incredibly tasty and really quick chicken curry recipe that is SIBO friendly. Tried and tested by my whole family! It’s a winner with my kids too!
Ingredients:
700g chicken thigh fillets, cut into bite sized pieces
1 teaspoon of either olive oil or ghee
2 green onions (shallots), green part only finely chopped
2 chillis, seeded and chopped (optional)
1 tablespoon ginger finely grated
2 1/2 teaspoon curry powder
1 carrot, diced
1 zucchini diced OR 100g pumpkin, diced (only one – the pumpkin does make it a bit creamier)
Small eggplant, diced
2 medium sized tomatoes, chopped
1/2 cup coconut milk
1 1/2 cups water
Salt to taste
- Heat oil and add in shallots, carrots, eggplant and either zucchini or pumpkin. Cook for a few minutes.
- Add in the chicken, add the curry powder and tomatoes and mix through until chicken is browned.
- Add the water and coconut milk. Bring to the boil then cover and simmer for 20 minutes.
- Only serve with 1/2 cup quinoa or white basmati/Jasmine rice if doing “Semi restricted” or “Phase 2” of the SIBO Biphasic Diet
