Turkey and pine nut meatloaf

This would have to be one of my favourite recipes that I have given to many clients and everyone loves it!  It’s so simple, healthy and tasty.

This is great for lunch the next day – goes well served cold

Serves 6

1 tablespoon olive oil

1 brown onion (or leek), finely chopped

2 garlic cloves, crushed

1/3 cup pine nuts, chopped

500g turkey mince (if you can’t get turkey use chicken)

1 1/2 cups gluten free breadcrumbs (use rice crumbs or quinoa crumbs)

¾ cup basil leaves, finely shredded

¼ cup flat leaf parsley, chopped

1 egg, lightly beaten

Serve with homemade chutney/relish

  1.  Preheat oven to 180°C.  Lightly grease (with olive oil) a 7cm deep, 10cm x 20cm loaf pan.
  2. Heat oil in a frying pan over medium heat.  Add onion, garlic and nuts.  Cook stirring for 8 minutes or until softened.  Allow to cool.
  3. Combine mince, breadcrumbs, herbs, egg, onion mixture and S&P.  Mix well.  Spoon mixture into pan.  Press down.  Bake for 40 minutes or until golden.
  4. Stand in pan for 10 minutes.  Serve with steamed vegetables or salad.
