Gluten Free Brownies with a Healthy Secret

I have been making this recipe for years and have played around with it during that time.  It’s always a winner in my house.

This recipe is gluten and dairy free and also can be converted to vegan by using chia seeds instead of egg.

400g can butter beans (drained)

2 eggs (or 1 tablespoon chia seeds mixed with 1/4 cup water per “egg”)

1 Tablespoon olive oil

1 Teaspoon vanilla bean paste

2 Tablespoon milk (can be any plant based milk eg coconut, almond, soy, oat, rice milk etc)

½ cup cacao (or cocoa powder or use carob powder if you prefer)

150g hazelnut or almond meal

¾ cup coconut sugar

1 Teaspoon baking powder.

 

  1. Preheat oven 180°C.  Grease a slice tin
  2. Blend all the wet ingredients together and then mix the dry ingredients into the wet mix.
  3. Pour into the tin and bake for 25-30 minutes.
  4. Let cool in the tin before slicing.
