Peanut

Peanuts are actually legumes and not nuts!

Despite the fact that many people are allergic to peanuts they are still the most commonly eaten of the nuts.

They have a good amount of protein about 20%, although their fat content is about 75% of the nut with most of it being unsaturated fat.  They contain good levels of niacin and biotin, but also contain the other B vitamins.  They are high in potassium, magnesium and phosphorus, but also contain calcium, iron, zinc, copper and manganese.

Peanuts can be heavily sprayed so looking for organic varieties is important.

Also peanuts are known to become easily contaminated with mould. Buying peanuts in their shell and then storing shelled peanuts in the fridge is a must.

Most commercial peanut butters are full of extra oil, salt, sugar and unnecessary ingredients.  So look out for places that sell freshly ground peanut butter made from only organic peanuts and nothing else!  You won’t ever want to go back to the commercial brands!!  I can highly recommend a place who grinds their own!

So if you do want to eat peanuts, buy those still in their shell, organic and peanut butter that has been made fresh, then store all in your fridge to avoid rancidity.
