Watermelon

Summer it appears is truly upon us early this year and watermelon is back in season!  It is a great thirst quenching fruit to have on these warmer days.

Watermelons are as they are named mostly water.  But they are also high in nutrients such as beta-carotene, vitamin c, potassium and magnesium.  They contain really good phytonutrients lycopene and lutein.

Watermelons can be a diuretic, stimulate urine flow, beneficial for those that may have problems in this area, but watermelon can generally be a good kidney cleanser, help with swelling and can be used to take heat out of the body.

Watermelon is very high on the glycemic index, so combining it with other foods can help bring this down.  Eaten just on its own can increase blood sugar levels to spike.

They can be used in fruit salads, but also consider them as part of a savoury dish as they go very well with savoury flavours too.
