Pine nuts

Pine nuts are the edible seeds of the pine cone.  Northern hemisphere countries that are abundant in pine trees have been eating these little nuts for many years.  They were a staple for the Native American.

They are a good source of protein, carbs and fats.  Good levels of iron, B vitamins, choline, vitamin E and the minerals magnesium, manganese, zinc, copper, potassium and phosphorus.

They can be helpful for dizziness, dry cough and constipation.

As they have a higher fat content they are susceptible to becoming rancid easily therefore pine nuts should be stored in a sealed container in the fridge.

They are commonly used in pesto, but can be used any way you would use other nuts, although they are more expensive.  Toasting them brings out their flavour, but be care not to burn them!
