Purple carrot

Carrots were originally purple not orange and they are making a come back.  They have double the amount of beta-carotene (Vitamin A) compared to the old orange carrot and contain 28 times more anthocyanins – the powerful antioxidant.  High in fibre, they are a great food to snack on raw with dip or hummus, lightly steam, add to salads or roast plus so many other ways to eat them.

Check out the picture – they are purple carrots I grew in my own vegie patch.
